As winemakers, we love working with these grapes and are continually impressed by the complexity of the finished wines. Fresh floral aromas are accompanied by star anise, melon, lychee, and stone fruit. The use of barrel fermentation lends a creaminess that to the mouth that creates a nice textural element. Fresh ginger and spice characters accent this richness while a notable acidity pushes through at the finish. A wonderful pairing for seared day boat scallops severed over a roasted fennel puree.
